Honey, mint and onion – a salad garnish you won’t believe tastes this good

Every time I make this for someone, they just won’t believe it tastes as good as it does, this is a recipe my mother used to make and said it keeps colds and hay fever at bay and cured leprosy etc. But in the end it just tastes incredible…


“Chef’n Emulstir Salad Dressing Mixer” (Chef’n)

Ingredients

5-10 spring onions or small sale onions

1 -2 desert spoons of clear honey

1 large bunch of mint (enough to fill cupped hands if picking fresh)

1 desert spoon of Modena Vinegar or cider vinegar if you prefer.

Chop the onion across the stem of the spring onions, using the green as well as the white of the onion this can be fine or course, then finely chop the mint and mix together in a bowl add the honey, then our on vinegar to taste.

This can be served separately or as a salad garnish.
