I used to love this recipe when I was a kid and made it from memory at the weekend so I thought I would write it up before i forget again:
It is a lovely meal, easy to make (and eat) and is a great winter warmer OR a meal for a rainy day in the spring or summer.
Ingredients
250-350 grams of white fish (haddock or cod)
250-350 grams of smoked fish (i use smoked haddock)
1 onion
1 tablespoon of olive oil
2 organic free range eggs
4 large potatoes
a handful of peas
1-2 heaped tablespoons of spelt flour
1/4 to 1/2 pint of semi-skimmed milk
Fresh Chives
Fresh Parsley
Grated Cheese
The Process
Remove all fish skin
On a low heat gently cook the white fish in a saucepan with the milk.
Cut the smoked fish into bite size chunks and put in the bottom of a casserole dish
Put in a handful of fresh or frozen peas
When the white fish is cooked, flake (break the fish up into large flakes) into the casserole
Keep the milk
Chop the onion put in a saucepan and saute in the oil
When the onion is soft (NOT brown) add the flour and absorb all the oil into the flour
Then add the milk the fish was cooked in and stir to absorb the flour, (this is a quick roue for sauce)
Add more milk for thickness, and leave to simmer on a very low heat.
Chop a good big handful of parsley and add to the sauce. (add flour and milk in suitable quantities for thickness)
Meanwhile peel and boil the potatoes
AND
hardboil and peel the two eggs
When the potatoes are soft drain and mash them with butter until soft
(do not add milk or make them too runny)
Chop and add chives to taste
Peel and cut the eggs into segments and add to the casserole dish
The pour the onion and parsley sauce on top
Spread the mashed potato on top of the mixture, using a fork to even it
Then sprinkle on the grated cheese
Place in a preheated oven at 200 degrees Centigrade
For 35 Minutes
