How to make Marzipan (jonathans recipe)

This recipe handed down to me by my mother makes a marzipan that can be used on cakes like simnel or christmas cake or for decorative marzipan fruits and so on.  It can turn out a little wet and will be improved if left over night.


Dark Chocolate Marzipan

The INGREDIENTS

8oz ground almonds

8oz sugar

1 large egg

1 tsp lemon juice

1 tsp brandy

drop of almond essence

THE METHOD

Put the sugar and egg in a bowl and put the bowl over a pan of barely simmering water, and beat the sugar and egg together with a fork or a whisk for a bout 10-15 minutes or until thick fluffy.

Remove from heat and allow a short cooling time

whisk in a teaspoon of lemon juice and a drop of almond essence or brandy if you like the taste

Now stir in the ground almonds until it forms a thick paste.

As I said above if the mixture is alittle wet then leave over night, but this can be shaped or rolled immediately, for christmas cake it can be rolled directly onto the cake or stuck to ti with hot apricot jam (yum), coloured with food colouring and shaped into marzipan fruits…go on use your creative urges.
